Daily Eats

Recap of lunch, snack, and dinner: I had a La Tortilla Factory wrap with turkey, hummus, and lettuce; carrots; and green grapes! For a snack I had the usual, Fage 0% with flax, almonds, and coconut! Dinner was amaaazing - grilled tuna, sauteed broccoli, and a green salad!

Okay, so update on the situation with J. He called me earlier tonight and it turns out that he was getting ready for a coffee date with a girl he met today. I'll admit, part of me is a bit jealous but I mostly just feel like he's "moving on" super fast from our relationship. I mean, we dated for SIX years and this is the second girl he's "dated" since our breakup, which was about a month ago. Am I being weird here (that's def a possibility lol)? Anyone have any advice or been in a similar situation?

The Final Countdown

2 days until Colleen's 21st! Finally, all three of us sisters will be 21! Yippee!!

I just got an email that my Naturally Nutty peanut butters shipped today!! I am soooo excited to try these - I've been reading about them forever on different blogs and people seem to love them!

Question of the Day: What is your favorite kind of nut butter? Favorite brand?

I love the almond butter they grind at Fresh Market and Smucker's All-Natural Chunky Peanut Butter!

Berry Lovely Muffins

Here's the recipe for the yummy muffins I eat for breakfast:

Berry Lovely Muffins

5 tsp. baking soda
2 cups water
1/2 cup butter
1 1/2 cups agave nectar
4 eggs
2 cups organic oatmeal
1/2 cup milk
2 cups All Bran Extra Fiber Cereal
2 cups Health Valley Organic Oat Bran Flakes
1 1/2 cups spelt flour
2 cups Hodgson Mill Organic Oat Bran flour
1/2 cup spelt flour
1 1/2 cups ground flax
1 quart 1.5% buttermilk

Dissolve the baking soda in 2 cups boiling water. Set aside to cool.

Cream the butter and agave nectar and beat in the eggs. Stir by hand the remaining ingredients. Finally, stir in the baking soda/water mixture.

Batter stays fresh covered in the fridge for weeks. Bake in muffin pans at 350 for 20 mins.

I hope you like them!! This recipe makes a LOT of batter so if you just want to try them, you could divide the recipe by 4 or 6.

Greek Yogurt = My Love.

Ever since I discovered greek yogurt about 1 year ago, I just cannot get enough of it! I eat it as a snack almost everyday. I've tried Fage, Chobani and Oikos but Fage will always be my #1. It seems thicker than the Chobani or Oikos and I LOVE me some thick yogurt! I usually eat my yogurt with 1 tbsp. of ground flaxseed, shredded unsweetened coconut, and dry-roasted slivered almonds. I usually add one packet of Equal (it's bad for me, I know) but I forgot to bring my Equal packets to work today! BOO! Only 3 days of work this week!!!

Eeeee! I'm so excited - my younger sister is turning 21 on Thursday so I'm only working 3 days at my internship this week! Yay!

We are going to have so much fun celebrating so I'm super pumped. Of course ED is freaking out a little bit because we are having cake on Thursday night - part of me doesn't want to have any but another part of me knows that one little piece of cake isn't going to make me instantly gain 10 lbs. Ughhh...any advice??

So, since this blog is new, I thought I'd introduce you guys to some of the important people in my life who I'll probably talk about frequently. First, there are my parents. I'm incredibly close to them and they're really like my best friends. I couldn't have asked for a better mom and dad. My twin sister, Caroline, is my best friend in the entire world and we spend tonssss of time together! She never dealt with an ED but is so supportive and always helps bring me back to reality when ED is really strong. My younger sister, Colleen, is super smart and fun and Caroline and I love her to pieces. She's so excited about turning 21! So, that's my family. We are all very close and spend a lot of time doing stuff together, which is great. Apart from my family, I'll probably mention a certain guy pretty frequently. Let's call him "J." J. was my boyfriend for about 6 yrs (crazy, I know!) and we just broke up a few months ago. We are still reallyyyy good friends and he is also very close to my family. He lives in another state and is flying down to spend Colleen's birthday weekend with us so I will let you know how that goes. It's been a bit tense lately because he's "moved on" from our relationship rather quickly and has already been with another girl (TMI? - sorry if it is!). I will let you all know how that goes when he gets here on Thursday, though.

As far as eats go, breakfast today was the typical muffin and berries. I also had a large iced coffee with a packet of chocolate "Amazing Grass." YUMMY!


Oh, and I will post the muffin recipe when I get home tonight! See you pretty girls later!

Erin, Meet the Sun.



Hello blogland!! I am so excited to finally get some sun today by the pool! I know what you're thinking - how does someone who lives in FL manage not to get sun?? lol The problem is, I work 5 days/week at my law internship and spend most weekends with my family (my dad has skin cancer and can't get much sun). But I am getting frighteningly pasty and have made the executive decision to spend some time by the pool today. ED is freaking out a bit because I'm going to be in my bathing suit but I know that it's HEALTHY to get a little sun every now and then so he can just deal with it.

I know I didn't post my breakfast yesterday and it's usually the same thing everyday: a muffin and fruit! My mom created the most AMAZING muffin recipe and I eat those basically everyday. They're super healthy (no white flour, no white sugar) and are packed with flaxseed and oatmeal. YUM! I can post the recipe if anyone wants it!

Mmmm....

Just got back from dinner - it was delicious, just as I expected! I had the "dinner size" house salad with shrimp on top and ate every bite! This place gives you like 10 shrimp too, which makes for a very happy Erin.

Another exciting event today... I ordered some Naturally Nutty nut butters online!! I've been wanting to try these forever and finally ordered them! I got the Vanilla Almond Butter, Vanilla Peanut Butter, and White Chocolate Coconut Peanut Butter! YUM! Have any of you tried the Naturally Nutty brand? What did you think of them?
